Gli alfajores sono dolcetti tradizionali dell'America Latina, particolarmente diffusi in Argentina e Uruguay.   • 0. In a large bowl, sift together the cornstarch, flour, baking powder, and baking soda. In another bowl, cream the softened butter and sugar until light and fluffy.
  • 1. Add the whole egg and egg yolk, one at a time, continuing to beat. Stir in the vanilla extract and grated lemon zest. Gradually fold the sifted flours into the butter and egg mixture, mixing gently until a smooth, soft dough forms.
  • 2. Wrap the dough in plastic wrap and let it rest in the refrigerator for at least 30 minutes. This step is essential for easier rolling and for maintaining the cookies' shape while baking.
  • 3. Preheat the oven to 180°C (350°F). Roll out the dough on a lightly floured surface or between two sheets of parchment paper until it's about 5 mm thick. Using a 5 cm diameter round pastry cutter, cut out discs and place them on a baking sheet lined with parchment paper, spacing them slightly apart.
  • 4. Bake the cookies in the preheated oven for 10-12 minutes. The cookies should remain pale; avoid over-browning them to maintain their crispiness. Remove from the oven and let cool completely on a wire rack.
  • 5. Spread a generous amount of dulce de leche on the flat surface of a cookie and place a second cookie on top, pressing lightly to adhere. For a traditional finish, roll the edges of the assembled cookies in shredded coconut so that the dulce de leche adheres. If you prefer, you can dust the surface with powdered sugar or partially dip the alfajores in melted chocolate for a more indulgent twist.
