  • 0. If they have skins, blanch the almonds and remove the skins. Cut the almonds in half lengthwise, separating the two lobes.
  • 1. You can toast the almonds in an air fryer for a few minutes (5-10) at 150°.
  • 2. Place the sugar in a saucepan over medium heat. Let it melt until it becomes liquid and lightly golden, being careful not to burn it.
  • 3. Add the warm almonds to the melted sugar. Stir well to completely coat the almonds in the caramelized sugar.
  • 4. Pour the mixture onto a lightly oiled marble surface or parchment paper. Use a spatula to spread the mixture as thinly as possible. To prevent the brittle from sticking, you can dip the spatula in hot water while working the mixture.
  • 5. Let the brittle cool slightly. Cut the brittle into pieces of the desired size while it's still warm.
  • 6. Let cool completely and store in an airtight container.
