Perfetto per una colazione leggera ma golosa, questo plumcake senza glutine e senza lattosio è soffice e profumato, grazie alla combinazione di farina di mandorle e farina di riso. Il latte di mandorla gli dona una nota delicata, mentre la margarina lo rende morbido senza lattosio.
Ingredients
- Brown sugar100 g
- Almond flour100 g
- Rice flour100 g
- Almond milk80 ml
- Margarine50 g
- Baking powder8 g
- Eggs3 u (180 g)
- Vanilla extract1 teaspoon
- Fine saltto taste
Procedure
0. In a bowl, beat the eggs with the sugar until light and fluffy.
1. Gradually pour in the almond milk, melted margarine, and vanilla extract (or lemon zest). Mix well.
2. Add the almond flour and rice flour sifted with the baking powder and salt. Mix gently until the dough is smooth.
3. Pour the batter into a loaf pan lined with parchment paper. Bake in a preheated oven at 170°C (340°F) for 35-40 minutes. Test with a toothpick: if it comes out clean, the loaf is ready!
