  • 0. Clean the asparagus by removing the tough, woody end of the stem. Remove the outer part of the stem using a vegetable peeler. Leave the tips intact. Steam the asparagus for 5-6 minutes; they should be soft but still firm and crunchy.
  • 1. Melt a knob of butter in a pan. Add the steamed asparagus. Sauté for a few minutes, seasoning with salt and pepper. They should be lightly browned and translucent.
  • 2. Keep the asparagus warm and crack an egg into the same pan. Cook the egg sunny-side up, leaving the yolk intact but still creamy inside. Gently pour the egg over the asparagus.
