Ingredients
- Asparagus250 g
- Eggs4 u (240 g)
- Lemon1 u (85 g)
- Black pepperto taste
- Fine saltto taste

Procedure
0. Clean the asparagus by removing the tough, woody end of the stem. Remove the outer part of the stem using a vegetable peeler. Leave the tips intact. Steam the asparagus for 5-6 minutes; they should be soft but still firm and crunchy.
1. Melt a knob of butter in a pan. Add the steamed asparagus. Sauté for a few minutes, seasoning with salt and pepper. They should be lightly browned and translucent.
2. Keep the asparagus warm and crack an egg into the same pan. Cook the egg sunny-side up, leaving the yolk intact but still creamy inside. Gently pour the egg over the asparagus.
