La frittata di asparagi รจ un secondo piatto semplice e primaverile, ricco di gusto e nutrimento. Ottima calda o fredda, perfetta per picnic, pranzi leggeri o aperitivi.
Ingredients
- Asparagus250 g
- Semi-skimmed milk50 ml
- Parmigiano Reggiano DOP25 g
- Breadcrumbs15 g
- Eggs6 u (360 g)
- Butter5 g
- Fine saltto taste
- Extra virgin olive oilto taste
- Black pepperto taste
Procedure
0. Start by washing the asparagus and removing the tips. Slice the asparagus stalks. In a pan, cook the asparagus tips with butter and a pinch of salt. In another pan, cook the asparagus with a pinch of salt and a drizzle of water, covered, for about 10 minutes.
1. In a bowl, beat the eggs and add the breadcrumbs, milk, Parmesan cheese, and cooked asparagus. Pour the mixture into the pan where you cooked the asparagus, adding a drizzle of oil. Arrange the asparagus tips on top. Cook with a lid on for about 7 minutes, then carefully flip the frittata. Brown the other side.
