Procedure
0. Wash the asparagus and arrange them in the center of the slices, cutting them to the same length as the slices. Sprinkle the slices with Parmesan cheese, a little salt and pepper, and roll them up tightly. Wrap the rolls in a few slices of pancetta and tie them with string.
1. Heat a pan with a drizzle of oil and add the asparagus rolls. Brown them thoroughly, then deglaze with white wine. Add a ladle of hot broth, season with salt and pepper, and cook for 15 minutes with the lid on.
