- Rabbit1 Kg
- New potatoes800 g
- Extra virgin olive oil20 ml
- Garlic1 clove
- Rosemaryto taste
- Fine saltto taste
- Butterto taste
- Black pepperto taste
Procedure
0. To make oven-roasted rabbit, you'll first need to seal the meat in a pan. Then, heat the oil and butter in a saucepan with the garlic clove and chopped rosemary. Add the rabbit pieces and brown them over high heat until they're evenly browned on all sides. Season with salt and pepper, and deglaze with the white wine. Let it evaporate, then continue cooking for another 5 minutes, lowering the heat slightly.
1. Meanwhile, peel and wash the potatoes, pat them dry, and cut them into evenly sized pieces. Place them in a bowl and season with oil, salt, and a pinch of pepper. Transfer the rabbit to a baking sheet lined with parchment paper, add the potatoes, drizzle with the casserole dish juices, and bake in a preheated oven at 200°C (400°F) for 40 minutes.
2. Once cooked, arrange the baked rabbit, together with the potatoes, on a serving dish and serve immediately.
