Ingredients

Procedure

  • 0. Wash and dry the basil leaves thoroughly. If using lemon zest, wash the lemon thoroughly and remove only the yellow part with a peeler, avoiding the bitter white part.
  • 1. Place the basil leaves and lemon zest in a large glass jar. Pour the pure alcohol into the jar, making sure the leaves are completely submerged. Seal the jar tightly and let it steep in a cool, dark place for 15-20 days, shaking the jar gently every day.
  • 2. After the soaking period, prepare the syrup. Bring the water to a boil in a saucepan and add the sugar. Stir until the sugar has completely dissolved. Let the syrup cool completely.
  • 3. Strain the macerated liquid through a coffee filter or cheesecloth to remove the basil leaves and lemon zest. Mix the cooled sugar syrup with the filtered alcohol.
  • 4. Transfer the liqueur to clean glass bottles and seal tightly. Let it rest in a cool, dark place for at least a month before drinking. This will allow the flavors to meld better.
  • 5. Chemistry of Basil Liqueur
  • 6. During maceration, the alcohol acts as a solvent, extracting aromatic compounds from the basil leaves. Basil's essential oils, such as eugenol and linalool, dissolve in the alcohol, giving the liqueur its characteristic aroma.
  • 7. Dissolving sugar in water creates a saturated solution that, when cooled and mixed with alcohol, balances the liqueur's sweetness. Sugar not only adds sweetness but also acts as a preservative, stabilizing the final product.
  • 8. Filtering removes solid particles (basil leaves and lemon zest), leaving a clear liquid. This step is crucial to obtaining a liqueur that is pleasing to the eye and palate.
  • 9. During maturation, volatile compounds continue to combine, enhancing the liqueur's aromatic profile. Alcohol facilitates the solubilization and stabilization of aromas, allowing for a more uniform and complex infusion.
