- Beef stew800 g
- Beef broth500 ml
- Cherry tomato300 g
- Tomato paste2 tablespoons

- Golden onion1 u (150 g)
- Black pepperto taste
- Fresh mintto taste

Procedure
0. Preparing the vegetables: In a large skillet, heat a drizzle of oil and sauté the diced onion and minced garlic until translucent. Add the eggplant cubes and cook until they begin to brown.
1. Cooking the meat: In another pan, heat a little oil and add the beef cubes. Brown the meat on all sides until golden brown. Transfer the meat to the pan with the eggplant.
2. Adding tomatoes and seasonings: Add the whole cherry tomatoes and tomato paste and mix well. Pour in the beef broth and bring to a boil. Reduce the heat and simmer for about 1-1.5 hours, or until the meat is tender.
3. Flavoring with mint and lime: At the end of cooking, add the lime juice and zest, and the chopped mint. Stir well and cook for another 5 minutes to allow the flavors to meld. Taste and adjust the salt and pepper to taste. Serve the stew hot, accompanied by basmati rice or crusty bread to soak up the sauce.
4. Tip: Make sure the eggplant is thoroughly cooked before adding the meat; this will help prevent it from becoming too mushy during the long cooking process. The stew can also be made ahead of time and reheated, allowing the flavors to develop even further.
