  • 0. Remove the beef fillets from the refrigerator at least 30 minutes before cooking to bring them to room temperature. Pat the fillets dry with paper towels and season them generously with coarse salt and pepper on both sides.
  • 1. In a large, heavy skillet, heat the extra virgin olive oil over medium-high heat until hot but not smoking. Add the beef tenderloins and cook, undisturbed, for about 3-4 minutes per side, until rare (4-5 minutes per side for medium, 6-7 minutes per side for well-done).
  • 2. During the last minute of cooking, add the butter, crushed garlic, and thyme (or rosemary) to the pan. Tilt the pan slightly and, using a spoon, baste the fillets with the melted butter and herbs.
  • 3. Remove the fillets from the pan and let them rest on a plate covered with foil for 5 minutes. This allows the juices to redistribute throughout the fillet.
  • 4. Wipe the mushrooms with a damp cloth and slice them thinly. In a pan, heat the extra virgin olive oil and butter over medium heat. Add the minced shallot and garlic and sauté until soft and translucent.
  • 5. Add the sliced mushrooms and cook for about 5-7 minutes, stirring occasionally, until the mushrooms are golden brown and have released their liquid.
  • 6. Pour in the white wine and let it evaporate completely. Add the fresh cream, season with salt and pepper, and simmer for about 5 minutes, until thick and flavorful.
  • 7. If the cream is too thick, you can add a little vegetable broth or water to achieve the desired consistency. Remove from the heat and stir in the chopped fresh parsley.
  • 8. Arrange the beef fillets on plates and pour the mushroom cream over or alongside the meat. Garnish with a sprig of thyme or rosemary and an additional sprinkling of freshly ground pepper.
  • 9. Serve the fillet immediately with the mushroom cream and, if desired, a side of roast potatoes or seasonal vegetables.
