Muffin soffici con yogurt e mirtilli: leggeri, umidi all’interno e fragranti in superficie. Perfetti per colazione o merenda!
Ingredients
- Type 00 flour250 g
- Blueberries150 g
- Granulated sugar130 g
- Sunflower oil80 ml
- Baking powder15 g
- Eggs2 u (120 g)
- Lemon zestto taste
- Fine saltto taste
Procedure
0. Preheat oven to 180°C (or 170°C (fan-assisted)). Line a muffin tin with paper liners.
1. Dry ingredients: In a bowl, combine the flour, baking powder, sugar, and salt. Add the lemon zest, if using, and mix briefly.
2. Wet Ingredients: In another bowl or jug, lightly whisk the eggs, then whisk in the yogurt and oil (or melted butter) until smooth.
3. Combine and mix: Pour the liquid mixture into the dry ingredients and mix as little as possible, just until you can no longer see any flour streaks. The dough should remain slightly lumpy. Don't overmix: the goal is to keep the dough light and fluffy.
4. Gently add the blueberries, mixing with a spatula without breaking them.
5. Fill the muffin cups about 2/3 full; if you like, you can top them with a few extra blueberries or sprinkle with brown sugar before baking.
6. Bake for 20–25 minutes (or ~15–18 minutes if using smaller pans), or until the muffins are puffed up, golden brown on top, and a toothpick inserted into the center comes out clean. Let the muffins rest in the pan for 5–10 minutes, then transfer them to a wire rack to cool completely.
