Il bonèt è un dolce tradizionale tipico del Piemonte, a base di uova, zucchero, latte, cacao, amaretti secchi e liquore. Nasce agli inizi dell'Ottocento dalla specifica rielaborazione e dall'evoluzione locale di preparazioni preesistenti e diffuse nelle cucine borghesi e nobili italiane ed europee.
Ingredients
- Whole milk500 ml
- Egg yolk150 u (2550 g)
- Granulated sugar100 g
- Amaretti100 g
- Dark chocolate70 g
- Cornstarch (Maizena)10 g
- Gelatin sheets5 g
- Rum5 ml
Procedure
0. To make the bunet, bring the milk to a boil in a saucepan, add the rum and previously soaked gelatin. Meanwhile, in a bowl, combine the sugar, cornstarch, and coarsely chopped amaretti biscuits. Mix them with the egg yolk, whisking until thickened.
1. Add the chocolate. Still on the heat, add the mixture to the milk, whisking constantly until it starts to boil. For the best results, it's important not to overcook the mixture to avoid the formation of granules.
2. Serve the bunet with whipped cream and garnish with crumbled amaretto.
