  • 1. In a large bowl or in a stand mixer, combine the flour, 70g of the sugar, the salt, the lemon zest, and the vanilla extract.
  • 2. Add the milk, yeast, and eggs. Begin kneading until the mixture is smooth. Add the softened butter, cut into pieces, and knead until the dough is smooth and elastic (about 10 minutes).
  • 3. Cover the dough with cling film and let it rise in a warm place for about 2 hours or until doubled in volume.
  • 4. In a bowl, combine the hazelnut flour, 00 flour, and 50g of sugar. Add the cold, cubed butter and work the mixture quickly with your hands until the mixture resembles sand and grains. Refrigerate until ready to use.
  • 5. Once the dough has risen, transfer it to a lightly floured work surface. Divide it into three equal portions and shape them into loaves. Twist the loaves into a braid.
  • 6. Transfer the braid to a baking sheet lined with baking paper.
  • 7. Cover the braid with a damp cloth and let it rise for another 45-60 minutes, until it is puffy.
  • 8. Brush the braid with a little milk or beaten egg. Sprinkle the surface with the hazelnut flour crumble.
  • 9. Bake in a preheated oven at 180°C (350°F) for about 30-35 minutes, until the bread is golden brown and cooked through. If necessary, cover with aluminum foil after the first 20 minutes to prevent it from browning too much.
