  • 0. In a bowl, lightly flour the pork ribs.
  • 1. In a large saucepan, heat the oil and sear the ribs on all sides until golden brown. Remove the ribs and set them aside.
  • 2. In the same saucepan, add the chopped onion and garlic, and cook over medium heat until softened.
  • 3. Add the red wine and let it evaporate for a few minutes, scraping the bottom of the pan to remove any caramelized bits.
  • 4. Return the ribs to the saucepan, add the beef broth, bay leaf, and rosemary sprigs. Cover and simmer over low heat for about 1 hour and 30 minutes, or until the ribs are very tender.
  • 5. After about 1 hour of cooking, add the pumpkin cubes to the pan. Continue cooking for the remaining 30 minutes.
  • 6. Once the stew is ready, remove the rosemary sprigs and bay leaf. Season with salt and pepper. Serve the stew hot, garnished with fresh parsley and the baked potatoes on the side.
