Lo stufato di costine di maiale con zucca e patate รจ un piatto succulento e avvolgente, perfetto per un pasto abbondante. Le costine, cotte lentamente, diventano incredibilmente tenere e saporite, mentre la zucca aggiunge una nota dolce che si sposa magnificamente con la ricchezza della carne. Le patate al forno, con il loro esterno croccante e l'interno soffice, completano questo piatto, rendendolo un pasto completo e soddisfacente.
Ingredients
- Pork ribs1 Kg
- New potatoes500 g
- Pumpkin400 g
- Red wine200 ml
- Extra virgin olive oil2 tablespoons
- Type 00 flour2 tablespoons
- Garlic2 cloves
- Bay leaf1 leaf
- Golden onion1 u (150 g)
- Fine saltto taste
- Black pepperto taste
- Rosemaryto taste
Procedure
0. In a bowl, lightly flour the pork ribs.
1. In a large saucepan, heat the oil and sear the ribs on all sides until golden brown. Remove the ribs and set them aside.
2. In the same saucepan, add the chopped onion and garlic, and cook over medium heat until softened.
3. Add the red wine and let it evaporate for a few minutes, scraping the bottom of the pan to remove any caramelized bits.
4. Return the ribs to the saucepan, add the beef broth, bay leaf, and rosemary sprigs. Cover and simmer over low heat for about 1 hour and 30 minutes, or until the ribs are very tender.
5. After about 1 hour of cooking, add the pumpkin cubes to the pan. Continue cooking for the remaining 30 minutes.
6. Once the stew is ready, remove the rosemary sprigs and bay leaf. Season with salt and pepper. Serve the stew hot, garnished with fresh parsley and the baked potatoes on the side.
