La classica Carbonara italiana: pasta cremosa con guanciale croccante, uova fresche e pecorino. Un piatto veloce e ricco di sapore da provare subito!
Ingredients
- Durum wheat pasta500 g
- Pork cheek200 g
- Pecorino125 g
- Egg yolk5 u (85 g)
- Black pepperto taste
Procedure
0. Cut the bacon into strips and brown it in a pan without adding oil over low heat.
1. Meanwhile, bring the pasta water to a boil. Grate the pecorino and add it to the egg yolks to form a cream.
2. Add a spoonful of bacon fat and half a ladle of cooking water to the cream.
3. Mix the pasta with the cream, adding a pinch of pepper. Serve with the crispy bacon on top.
