Procedure
0. Preheat the oven to 180°C and line a loaf pan with baking paper or lightly grease it.
1. In a large bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.
2. In another bowl, mix the plant-based milk, oil, and brown sugar until smooth. Add the grated carrots and chopped nuts, mixing well.
3. Pour the wet ingredients into the bowl with the dry ingredients and stir until just combined. It's important not to overmix, as this will make the cake too dense.
4. Pour the batter into the prepared pan and smooth it out with a spatula. Bake for about 45-50 minutes, or until a toothpick inserted into the center of the cake comes out clean.
5. Let the plum cake cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
