Ingredients
- Carrots300 g
- Chickpeas (precooked)100 g
- Tahini2 tablespoons
- Extra virgin olive oil2 tablespoons
- Cumin1 teaspoon
- Lemon juice1 tablespoon
- Garlic1 clove
- Fine saltto taste
- Black pepperto taste
- Smoked paprikato taste
Procedure
0. Peel the carrots and cut them into rounds. Steam them or cook them in lightly salted boiling water for about 10-12 minutes, until very soft. Let them cool slightly and drain well (if boiled, pat them dry on paper towels).
1. In a powerful blender, combine the carrots, chickpeas, tahini, garlic, cumin, lemon juice, oil, a pinch of salt, pepper, and paprika. Blend in batches, adding 1-2 tablespoons of cold water to make the hummus smoother.
2. Taste and adjust the salt, lemon, or spices to your taste. If desired, stir in a spoonful of yogurt by hand to make it creamier and fluffier.
