Ingredients
- Spreadable cheese350 g
- Blueberries250 g
- Dry biscuits125 g
- Fresh cream80 ml
- Gelatin sheets8 g
- Lemon1 u (85 g)
- Vanilla essence1 u
Procedure
0. Start by making a blueberry cream. In a small saucepan, heat the blueberries with a tablespoon of sugar, a dash of lemon juice, and half a glass of water. Stir until the blueberries have broken down. Let cool.
1. Soak the gelatin in cold water for about ten minutes. Meanwhile, melt some butter and crush the biscuits (using a rolling pin).
2. Combine the melted butter and biscuits, then place the mixture in the bottom of a glass and compact with a teaspoon. Let it cool.
3. Melt the gelatin in a saucepan with the cream and let it cool. Begin whipping the cream cheese and add the cream, gelatin, and sugar. Add the vanilla essence.
4. Pour the cream into a glass and let it chill for a few minutes in the freezer. Then top with the blueberry jam. Let it chill in the freezer until ready to serve.
