Ingredients
- Fresh cream260 ml
- Dark chocolate200 g
- Chestnut flour150 g
- Butter100 g
- Type 00 flour100 g
- Granulated sugar100 g
- Powdered sugar80 g
- Hazelnuts30 g
- Eggs1 u (60 g)
- Fine saltto taste
Procedure
0. In a bowl, combine the chestnut flour, 00 flour, salt, and cold cubed butter. Work with your fingers until the mixture resembles sand. Add the sugar and egg, and quickly knead until it forms a ball. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
1. Roll out the pastry and line a tart pan (about 24 cm in diameter). Prick the bottom with a fork, cover with parchment paper, and place some pie weights on top. Bake in a preheated oven at 180°C (350°F) for 20 minutes, then remove the weights and bake for another 5-10 minutes, until the base is golden brown. Let cool.
2. In a small saucepan, heat 200 ml of cream until just below boiling. Pour the hot cream over the chopped chocolate and stir until smooth and glossy. Pour the ganache over the cooled tart base and refrigerate to set.
3. In a small saucepan, melt the sugar and water over medium heat, stirring constantly, until golden brown. Remove from the heat and add the butter and cream (be careful not to splash). Stir until the caramel is smooth. Add the salt and let cool slightly.
4. Pour the caramel over the set ganache, forming a thin layer. Add some toasted hazelnuts for a crunchy finish.
