Prepara una marmellata di castagne fatta in casa: cremosa, dolce e perfetta per colazioni autunnali e dolci golosi. Solo pochi ingredienti naturali!

  • 0. Wash the chestnuts and score them with a small knife on the rounded side, being careful not to cut yourself. Place the chestnuts in a pot with water and a pinch of salt. Bring to a boil and cook for about 30 minutes. Once cooked, drain and peel them while still warm, removing both the outer skin and the inner skin.
  • 1. Place the peeled chestnuts in a saucepan with 500 ml of water. Add the vanilla pod split lengthwise (or the extract). Bring the water to a boil and cook for 10-15 minutes until the chestnuts begin to fall apart slightly.
  • 2. Remove the vanilla pod (if using) and blend the chestnuts with an immersion blender or food processor until smooth. If the puree is too thick, add a little of the cooking water to loosen it.
  • 3. Return the puree to the saucepan and add the sugar. Stir well to combine. Cook over low heat, stirring constantly to prevent sticking, for about 30-40 minutes, or until the jam reaches the desired consistency.
  • 4. When almost cooked, add the shot of rum for a hint of flavor. Let it cook for a few more minutes to evaporate the alcohol.
  • 5. To check if the jam is ready, place a teaspoon of jam on a small plate and let it cool. Tilt the plate: if the jam doesn't slide off quickly, it's ready.
  • 6. If you prefer a sweeter jam, you can increase the sugar content to 700-750 g. For a more rustic texture, you can puree the chestnuts instead of blending them. The jam is perfect for filling autumn desserts, spread on bread, or served with aged cheeses for a gourmet pairing.
