Ingredients
- Chicken thighs600 g
- Whole Greek yogurt200 g
- Extra virgin olive oil30 ml
- Cumin10 g
- Chives10 g
- Lemon juice10 ml
- Honey7 g
- Coriander5 g
- Turmeric5 g
- Sweet paprika5 g
- Garlic2 cloves
- Lemon1 u (85 g)
- Black pepperto taste
- Fine saltto taste
- Gingerto taste
Procedure
0. In a large bowl, combine the olive oil, lemon juice, spices (paprika, cumin, turmeric, coriander, ginger), minced garlic, salt, and pepper. Mix well until the marinade is smooth. Add the chicken cubes and stir to marinate evenly. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, preferably overnight.
1. In a bowl, combine the Greek yogurt, lemon juice, cumin, chives, and honey (if using). Season with salt and pepper and mix well. Refrigerate until ready to serve.
2. Thread the marinated chicken cubes onto skewers (if using wooden skewers, remember to soak them in water for 30 minutes before using to prevent them from burning). Cook the arrosticini on a preheated grill or griddle over medium-high heat, turning every 2-3 minutes, until the chicken is golden brown and cooked through (about 10-12 minutes).
3. Serve the arrosticini hot, accompanied by the yogurt sauce for dipping. You can also garnish with a few slices of red onion and fresh parsley.
