Ingredients
- Vegetable broth500 ml
- Basmati rice350 g
- Coconut milk200 ml
- Roasted peanuts50 g
- Red onion2 u (300 g)
- Bell pepper2 u (440 g)
- Curry1 teaspoon
- Lime1 u (50 g)
- Whole chicken1 u (1000 g)
- Cumin1 teaspoon
- Vegetable oilto taste
- Black pepperto taste
- Parsleyto taste
- Fine saltto taste
Procedure
0. Cut the chicken into pieces (you can have your butcher cut it for you). Finely chop the onion and garlic. Slice the red and green peppers.
1. Heat the olive oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until golden brown and cooked through. Remove the chicken from the pan and set aside.
2. In the same pan, add the chopped onion and garlic. Sauté until the onion is translucent and the garlic is fragrant. Add the sliced bell peppers and cook until tender.
3. Reduce the heat to low and add the coconut milk to the pan, stirring well. Add the peanuts, honey, and pepper (if using). Season with salt. Also add the curry, cumin, and parsley.
4. Return the cooked chicken to the pan and stir to coat it with the sauce. Simmer for about forty minutes to allow the flavors to meld.
5. Meanwhile, cook the basmati rice by absorbing it with vegetable broth. Remember to salt the rice immediately, as it will absorb the salt during the initial cooking stage. Serve in a single dish, garnished with lime.
