  • 0. Place the chickpea flour in a bowl, make a well in the center, and pour in the water, stirring constantly to avoid lumps, until the mixture is smooth.
  • 1. Cover with a cloth and let it rest in a cool place for about 5 hours, skimming and stirring occasionally. Add the extra virgin olive oil and sea salt and stir again until the oil is well incorporated.
  • 2. Preheat the oven to 250°C (480°F), grease two nonstick baking pans (about 32 cm in diameter) with extra virgin olive oil. Spread the chickpea mixture evenly between the two pans and add the finely chopped onion. Bake for about 20 minutes, until the mixture is golden brown. Sprinkle with freshly ground black pepper, cut the farinata into wedges or squares, and serve hot.
