Procedure
0. Wash the spinach thoroughly and drain. Thinly slice the fennel using a mandolin or knife. Cut the tomato into wedges or halve the cherry tomatoes. Peel the avocado, remove the stone, and cut it into slices or cubes. Immediately drizzle with lemon juice to prevent it from browning.
1. In a large bowl, combine the chickpeas, spinach, fennel, tomatoes, and avocado. Season with extra virgin olive oil, lemon juice, salt, and pepper. Stir gently to avoid breaking the avocado.
2. Add toasted seeds for a crunchy touch, if desired. Garnish with chopped fresh herbs.
