  • 2. Add the soaked dates, vanilla extract, and melted or chopped dark chocolate. Blend until the mixture becomes moist and sticky, easily compacted by hand. If necessary, add 1-2 tablespoons of plant-based milk to loosen the mixture.
  • 3. With slightly dampened hands, take a small amount of dough and shape it into balls about 3 cm in diameter. Roll them in the shredded coconut to coat them evenly.
  • 4. Refrigerate the energy balls for at least 30 minutes to firm up. You can store them in an airtight container in the refrigerator for up to 7 days, or freeze them for about a month.
