Pasta semintegrale con pesto alla genovese e kumquat
Ingredients
- Whole wheat dry pasta200 g
- Mandarin50 g
- Hard cheese30 g
- Basil20 g
- Roasted peanuts20 g
- Pine nuts10 g
- Extra virgin olive oilto taste
- Brown sugarto taste
Procedure
0. In a pot of boiling salted water, cook the spelt or semi-whole wheat pasta.
1. Meanwhile, prepare the pesto with a blender or mixer with the peanuts, adding the basil, pine nuts, the cheese, better if grated, and plenty of olive oil.
2. In a small pan, brown the kumquats cut in half and possibly deseeded with olive oil and two teaspoons of sugar, adding a little water.
3. When the pasta is al dente, drain it and add the pesto. Add the kumquats directly to the dish.
