Il classico budino con bacca di vaniglia che facevo anche da bambina.
Ingredients
- Whole milk500 ml
- Hazelnuts50 g
- Granulated sugar4 tablespoons
- Cornstarch (Maizena)4 tablespoons
- Eggs2 u (120 g)
- Vanilla bean1 u
Procedure
0. Vanilla pudding is as delicious as it is simple to make. The trickiest part is cutting the vanilla bean in half lengthwise. Using a knife, scoop out the dark, inner core and drop it into the pot with the milk. Bring the milk to a boil.
1. I also add the whole pod for a more intense vanilla flavor. In another saucepan, I place the egg yolks (don't throw away the whites, because you could make an omelet with them) and 4 tablespoons of sugar, and begin stirring. I add 4 level tablespoons of cornstarch and continue stirring. Finally, I pour in the very hot milk and continue stirring.
2. Alternatively, you can use soy milk, which thickens quite well. Stir until the mixture thickens and acquires the typical creaminess of an excellent pudding. At this point, remove the vanilla pod. Let it cool slightly and then pour it into a moistened pudding mold.
3. Finally, I use a spoon to scoop out whatever's stuck to the pan and eat it! For an extra touch, I garnish the cups with chopped hazelnuts.
