Le polpette di merluzzo e patate al forno sono un secondo piatto leggero e gustoso, perfetto per chi cerca un'alternativa sana alle classiche polpette fritte. Grazie alla cottura in forno, risultano dorate fuori e incredibilmente morbide dentro, con un sapore delicato che conquista grandi e piccini. Ottime da servire con una salsa allo yogurt o una maionese leggera, sono ideali per un pranzo nutriente e bilanciato.
Ingredients
- Cod fillet300 g
- Yellow potatoes250 g
- Breadcrumbs50 g
- Eggs1 u (60 g)
- Garlic1 clove
- Parmigiano Reggiano DOP1 tablespoon
- Smoked paprika1 teaspoon
- Lemon zestto taste
- Parsleyto taste
Procedure
0. Cook the potatoes in their skins in boiling water for about 25-30 minutes, until tender. Drain, peel, and mash them with a potato masher or a fork.
1. If using frozen cod, thaw it and dry it thoroughly. Steam it or pan-fry it with a drizzle of oil for about 5 minutes, until it flakes easily. Fluff it with a fork and remove any bones.
2. In a bowl, combine the crumbled cod, mashed potatoes, egg, breadcrumbs, chopped parsley, grated garlic (if desired), Parmesan cheese, salt, and pepper. Mix until smooth. If the mixture is too soft, add more breadcrumbs.
3. Take small portions of the dough and shape them into round balls. Roll them in a little breadcrumbs for a crispier crust.
4. Arrange the meatballs on a baking sheet lined with parchment paper and brush them with a drizzle of extra virgin olive oil. Bake in a preheated oven at 200°C (400°F) for about 20-25 minutes, turning them halfway through for even browning.
5. Serve the meatballs hot, accompanied by a yogurt sauce or a fresh salad.
6. For a bolder flavor, add grated lemon zest or a pinch of paprika.
