Ingredients
- Cod fillet400 g
- Yellow potatoes350 g
- Golden onion50 g
- Butter50 g
- Cornstarch (Maizena)15 g
- Garlic1 clove
- Lemonto taste
- Soy sauceto taste
- Fine saltto taste
- Extra virgin olive oilto taste
- Lettuceto taste
- Rosemaryto taste
Procedure
0. For the base: grate the potatoes using a grater. Boil the potatoes in salted water for about 3 minutes. Drain and add them to a bowl with the cornstarch, salt, parsley, and pepper. Add a knob of butter to a nonstick pan and, once melted, spread out a portion of the mixture until it forms a compact disk (using a spatula). Cook the disk for 5 minutes per side until crispy.
1. For the cod: Melt a knob of butter and a drizzle of oil in a nonstick pan. Add the herbs and half a lemon, cut into quarters, and cook the cod, covered, for about three minutes per side. Once the cod is cooked, transfer it to the potato disc, which you've placed in the center of a shallow dish.
2. Complete the recipe by adding the salad and pouring a few drops of soy sauce to flavor everything.
