Questa zuppa è perfetta per rinfrescare e sorprendere con sapori leggeri e una texture vellutata. Da accompagnare con pane o pollo grigliato.
Ingredients
- Greek yogurt 0%200 g
- Cucumber2 u (500 g)
- Avocado2 u (600 g)
- Garlic1 clove
- Lime1 u (50 g)
- Extra virgin olive oil1 tablespoon
- Black pepperto taste
- Mintto taste
- Fine saltto taste
Procedure
0. Peel and chop the cucumbers (you can remove the seeds if you prefer an even smoother texture). Peel and chop the avocados as well.
1. In a blender, add avocado, cucumber, Greek yogurt, lime juice, mint, garlic (if desired), olive oil, salt, and pepper.
2. If you want an even cooler soup, add a few ice cubes and blend again until you get a creamy, smooth consistency.
3. Taste and adjust with more salt, pepper, or lime juice if necessary.
4. Pour the soup into bowls or glasses and garnish with fresh mint leaves, a drizzle of olive oil, and a sprinkling of black pepper.
