  • 0. Blitz the dark chocolate cookies in a blender until finely ground. Mix with the melted butter until moist and compact. Spread the mixture over the bottom of a 20 cm springform pan, pressing firmly with the back of a spoon. Refrigerate for at least 30 minutes to firm up.
  • 1. Soak the gelatin in cold water for 10 minutes. Blend half the mango pulp until smooth. Heat 50 ml of cream without boiling, then dissolve the well-squeezed gelatin in it. Whip the mascarpone and cream cheese with the powdered sugar and vanilla extract until smooth. Add the mango pulp and dissolved gelatin and mix well. Whip the remaining cream and gently fold it into the mixture. Pour the filling over the crust and smooth with a spatula. Refrigerate for at least 4-5 hours (preferably overnight).
  • 2. Blend the mango with the sugar and lemon juice until smooth. Gently heat the coulis in a small saucepan for 2 minutes and let it cool.
  • 3. Pour the mango and blueberry coulis over the chilled cheesecake and spread it evenly. Garnish with a few whole blueberries and, if desired, dark chocolate shavings or mint leaves. Serve chilled and enjoy this exotic and delicious cheesecake!
