Ingredients
- Chicken breast500 g
- Mayonnaise300 g
- Whole yogurt150 g
- Carrots150 g
- Shallot100 g
- White onion100 g
- Apricot85 g
- Tomato paste15 g
- Extra virgin olive oil5 ml
- Bay leaf1 leaf
- Lemon1 u (85 g)
- Fine saltto taste
- Black pepperto taste
- Parsleyto taste
- Curryto taste
Procedure
0. Start by placing the chicken breast in a pot and covering it with water. Add a bay leaf and pepper. Bring to a boil and cook over medium-low heat for 20-25 minutes.
1. After this time, remove the chicken but reserve the broth. Reduce the broth until you have about 150 ml. Meanwhile, wash and slice the apricots. Sauté them in a pan with a drizzle of oil. Add the curry and continue cooking. Add the tomato paste and lemon juice and continue cooking until thickened.
2. Remove any skin from the chicken and cut the breast into small pieces. In a bowl, combine the chicken, mayonnaise, and yogurt, and stir in the cooking juices. Finally, stir in the curried apricots. Let it rest for an hour to allow all the flavors to develop.
