  • 0. Wash the cauliflower and divide it into florets. Peel the potato and dice it. Finely chop the onion and garlic.
  • 1. In a large pot, heat the extra virgin olive oil. Sauté the onion and garlic over medium heat until soft and fragrant.
  • 2. Add the cauliflower florets and potato cubes to the pot. Pour in the vegetable broth and bring to a boil. Reduce the heat and simmer, covered, for about 20 minutes, until the vegetables are tender.
  • 3. Once cooked, transfer the vegetables and their broth to a blender (or use an immersion blender directly in the pot). Blend until smooth and velvety.
  • 4. Return the soup to the heat and add the milk. Season with salt and pepper. Stir well and simmer for another 5 minutes.
  • 5. Pour the soup into bowls. Garnish with a drizzle of extra virgin olive oil, dried chili pepper or crumbled crispy bacon, fresh parsley, and, if desired, a sprinkling of grated Parmesan cheese.
