Ingredients
- Vegetable broth500 ml
- Whole milk200 ml
- Extra virgin olive oil1 tablespoon
- Yellow potatoes1 u (200 g)
- Cauliflower1 u (1250 g)
- White onion1 u (150 g)
- Parsleyto taste
- Black pepperto taste
- Chili pepperto taste
- Fine saltto taste
Procedure
0. Wash the cauliflower and divide it into florets. Peel the potato and dice it. Finely chop the onion and garlic.
1. In a large pot, heat the extra virgin olive oil. Sauté the onion and garlic over medium heat until soft and fragrant.
2. Add the cauliflower florets and potato cubes to the pot. Pour in the vegetable broth and bring to a boil. Reduce the heat and simmer, covered, for about 20 minutes, until the vegetables are tender.
3. Once cooked, transfer the vegetables and their broth to a blender (or use an immersion blender directly in the pot). Blend until smooth and velvety.
4. Return the soup to the heat and add the milk. Season with salt and pepper. Stir well and simmer for another 5 minutes.
5. Pour the soup into bowls. Garnish with a drizzle of extra virgin olive oil, dried chili pepper or crumbled crispy bacon, fresh parsley, and, if desired, a sprinkling of grated Parmesan cheese.
