  • 0. In a pressure cooker, heat the oil and sauté the onion for 2 minutes. Add the garlic and ginger and sauté for another minute.
  • 1. Add the curry, turmeric, and paprika. Stir for a few seconds to release the aromas.
  • 2. Add the chicken and sauté for 2-3 minutes, until it changes color. Add the tomato paste and mix well.
  • 3. Pour in the broth and close the pressure cooker. Cook on high pressure for 10 minutes after the whistle (if using boneless thighs, extend to 12 minutes).
  • 4. After cooking, vent the pot and open the lid. Pour in the coconut milk and stir. Simmer uncovered for 5 minutes until the sauce thickens. Season with salt and pepper.
