  • 0. Place the peeled and chopped onion into the Thermomix jug and chop for 5 seconds at speed 5. Add the olive oil and fry for 3 minutes at 100°C at speed 1.
  • 1. Add the washed and chopped fennel, red cabbage, and asparagus to the bowl. Blend everything together for 5 seconds on speed 4. Add the vegetable broth, salt, and pepper. Cook for 25 minutes at 100°C on speed 1.
  • 2. Once cooked, blend the soup for 1 minute, gradually increasing the speed to speed 7, until you obtain a smooth and creamy consistency.
  • 3. Taste and adjust the seasoning with salt and pepper if necessary. If the soup is too thick, you can add a little hot broth until it reaches the desired consistency. Serve hot, perhaps with a drizzle of olive oil and croutons for added crunch.
