Questi involtini, tipici della cucina mediorientale e mediterranea, ricordano i börek turchi o i sigari marocchini. Il ripieno è saporito e ben speziato, avvolto in una crosta croccante di pasta fillo dorata in forno.

  • 0. In a skillet, heat the olive oil over medium heat and add the chopped onion. Sauté for 3-4 minutes until translucent. Add the grated garlic and cook for another minute, then add the ground beef and break it up with a wooden spoon.
  • 1. When the meat begins to brown, add all the spices: paprika, cumin, cinnamon, black pepper, and chili pepper. Stir well and cook for 10 minutes until the meat is well-cooked and flavored. Remove from the heat and add the chopped parsley and mint, along with the raisins or pine nuts, if using. Let cool.
  • 2. Take a sheet of phyllo dough and cut it in half (if it's too large). Lightly brush the surface with a little olive oil to prevent it from drying out.
  • 3. Place a generous spoonful of filling on the bottom of the phyllo strip and begin rolling it up, folding the sides inward to seal the filling. Continue rolling until you have a tight cigar. Repeat with the remaining dough and filling.
  • 4. Arrange the rolls on a baking sheet lined with parchment paper. Whisk the egg yolk with the milk and brush the surface of the rolls until golden brown. Sprinkle with sesame seeds and bake in a preheated oven at 190°C (375°F) for about 20-25 minutes, until golden and crispy.
  • 5. In a bowl, combine the Greek yogurt with the lemon juice, grated garlic, olive oil, salt, and pepper. Add the chopped mint and mix well.
  • 6. Arrange the rolls on a serving platter, garnish with fresh mint leaves and serve with the yogurt sauce and lemon slices.
