  • 0. Make the béchamel sauce. In a small saucepan, melt 15g butter over medium heat. Add 15g flour and stir until a smooth roux forms (1 minute). Gradually pour in 150ml hot milk, stirring constantly. Cook for about 5–6 minutes, until the sauce is smooth. Add 1g salt, a pinch of nutmeg, and white pepper.
  • 1. Assemble the Croque-Monsieur. Spread about 1 tablespoon (30 g) of béchamel sauce on 2 slices of bread. On each slice, top with: 40 g cooked ham; 20 g grated cheese; Top with the other 2 slices of bread. Spread 5 g of softened butter on the outside of each sandwich.
  • 2. Oven method (recommended for a perfect crust). Arrange the toasts on baking paper. Cover each with: 30 g of béchamel sauce (top); 20 g of grated cheese (side by side); Bake at 200°C (400°F) for 12 minutes. Turn on the broiler and grill for 2–3 minutes, until golden and gooey.
