Ingredients
- Ground beef400 g
- Peeled tomatoes400 g
- White bread60 g
- Semi-skimmed milk50 ml
- Parsley2 tablespoons
- Garlic2 cloves
- Cumin1 teaspoon
- Eggs1 u (60 g)
- Tarragon1 teaspoon
- Fine saltto taste
- Black pepperto taste
- Extra virgin olive oilto taste
Procedure
0. In a large bowl, combine the meat, soaked and squeezed bread (or breadcrumbs mixed with milk), egg, cumin, tarragon, salt, and pepper. Mix with your hands until smooth. If you have time, let it rest in the refrigerator for 15 minutes: it will hold together better.
1. Using wet hands or a small ice cream scoop, form walnut-sized meatballs. If you're serving them as an appetizer, you can make them smaller.
2. In a large skillet, heat a drizzle of oil and brown the meatballs on all sides over medium-high heat until golden brown. They don't need to be cooked through; we'll finish cooking them in the sauce. Set aside.
3. In the same pan, add a drizzle of oil if necessary, the crushed garlic, and sauté until golden. Add the peeled tomatoes, mashing them lightly with a fork. Season with salt and pepper. Add half the parsley.
4. Return the meatballs to the pan, cover, and cook over low heat for 20–25 minutes, stirring gently halfway through. The sauce should thicken and become more flavorful.
5. Serve the meatballs piping hot with the sauce, garnished with the remaining chopped fresh parsley. For a unique presentation, portion out 3 meatballs in small ceramic bowls, top with a teaspoon of sauce and a small green leaf.
6. You can also use chicken or turkey for a lighter version. Fresh tarragon has a more delicate flavor; if you can find it, use it without hesitation. For a more robust sauce, add a teaspoon of tomato paste at the beginning.
