Un’esplosione di gusto mediterraneo: pomodori secchi intensi frullati con noci croccanti, aglio e un filo d’olio per un pesto ricco e avvolgente.
Ingredients
- Dried tomatoes300 g
- Extra virgin olive oil50 ml
- Almonds50 g
- Capers in saltto taste
- Chili pepperto taste
- Parsleyto taste
- Basilto taste
- Dried oreganoto taste
Procedure
0. Wash the sun-dried tomatoes and dry them on a cloth. Bring the water to a boil, add a little vinegar, and blanch the sun-dried tomatoes for 5 minutes.
1. Drain the sun-dried tomatoes and pat them dry on a cloth. Meanwhile, toast the pine nuts. Place the tomatoes, parsley, capers, chili pepper, basil, and oil in a blender.
2. Add the toasted pine nuts while blending the mixture.
