  • 0. Mix the flour with the water, adding a pinch of salt and baking soda. Mix until smooth, then let it rest in the refrigerator, covered, for the rest of the preparation time.
  • 1. Filling: Fry the julienned onions in butter until they begin to soften, add the finely diced pepper, add the minced meat and stir constantly to break it up.
  • 2. Season with salt and pepper, add the wine, bring to a boil, and then add the tomato paste and the diced potatoes. If the sauce is dry, add water or broth.
  • 3. Dissolve the spices in a little cold water and add them to the filling, boil everything for 30 minutes.
  • 4. While the dough is cooling, roll out the dough, not too thinly, and cut out circles with a cookie cutter.
  • 5. Fill the empanadas and close them with the standard closure, or if you prefer, make it easier by pressing them with a fork on the edge.
  • 6. Fry in hot oil until golden brown.
