Procedure
0. Peel the potatoes and cut them into chunks. Cook them in a pot of salted water for about 15-20 minutes, until tender. Meanwhile, cook the cod in a pan for about 5 minutes, adding a drizzle of oil.
1. In a bowl, combine the fish, potatoes, flour, parsley, lemon zest, salt, egg, pepper, tarragon, and breadcrumbs. Mix until smooth.
2. Shape the meatballs and cook them in a pan with a little oil for about 5 minutes. Alternatively, for a lighter option, you can cook them in an air fryer for 10-15 minutes at 200°C.
