Ingredients
- Lettuce150 g
- Rice vermicelli100 g
- Soybean sprouts100 g
- Rice sheets8 sheets
- Peanut butter3 tablespoons
- Water2 tablespoons
- Salsa Hoisin2 tablespoons
- Soy sauce1 tablespoon
- Garlic1 clove
- Carrots1 u (75 g)
- Brown sugar1 teaspoon
- Cucumber1 u (250 g)
- Fresh mintto taste
- Roasted peanutsto taste
- Chili pepperto taste
Procedure
0. Cook the rice vermicelli in boiling water for about 3 minutes, drain, and rinse with cold water. Prepare the vegetables by julienne-cutting them. Stir-fry the peeled shrimp with a little soy sauce. Halve the cooked shrimp lengthwise.
1. In a small saucepan, combine the peanut butter, hoisin sauce, soy sauce, sugar, garlic, and water. Heat over low heat until creamy. Pour into a small bowl and top with the chopped peanuts.
2. Dip a sheet of rice paper in warm water for a few seconds, until soft. Place it on a flat surface and arrange a lettuce leaf, some vermicelli noodles, carrots, cucumber, bean sprouts, and mint in the center. Add two shrimp halves to the top of the rice paper (so they'll be visible from the outside). Fold the sides inward, then roll the roll up tightly from the bottom up.
3. Arrange the rolls on a plate and serve with the peanut sauce.
