  • 0. Rinse the lentils thoroughly under running water until the water runs clear. Add the rinsed lentils and water to a large pot. Bring to a boil, then reduce the heat and simmer over medium-low heat for about 20-30 minutes, or until the lentils are tender and have absorbed most of the water. Stir occasionally and add more water if necessary to reach the desired consistency.
  • 1. Meanwhile, in a separate pan, heat the vegetable oil or ghee over medium heat. Add the chopped onion and cook until translucent, about 5-7 minutes.
  • 2. Add the minced garlic and grated ginger. Cook for another 1-2 minutes, until they release their aroma.
  • 3. Add the chopped or pureed tomatoes and cook for about 5-7 minutes, until softened and the sauce has thickened slightly. Add the spices: turmeric, cumin powder, coriander powder, and red chili powder (if using). Stir well to combine.
  • 4. Add the spicy tomato sauce to the cooked lentils and stir well. Cook for another 5-10 minutes over medium-low heat, stirring occasionally to blend the flavors. Taste and adjust the salt and pepper to taste. If you'd like a hint of acidity, you can add a little lemon juice at this point.
  • 5. Once cooked, serve the dal hot, garnished with fresh parsley or coriander leaves if desired. You can accompany it with naan bread, basmati rice, or other Indian dishes.
