Ingredients
- Lentils (dried)300 g
- Water3 cups
- Garlic3 cloves
- Cluster tomato2 u (400 g)
- Vegetable oil2 tablespoons
- White onion1 u (150 g)
- Turmeric1 teaspoon
- Cumin1 teaspoon
- Chili powderto taste
- Fine saltto taste
- Parsleyto taste
- Gingerto taste
- Corianderto taste
Procedure
0. Rinse the lentils thoroughly under running water until the water runs clear. Add the rinsed lentils and water to a large pot. Bring to a boil, then reduce the heat and simmer over medium-low heat for about 20-30 minutes, or until the lentils are tender and have absorbed most of the water. Stir occasionally and add more water if necessary to reach the desired consistency.
1. Meanwhile, in a separate pan, heat the vegetable oil or ghee over medium heat. Add the chopped onion and cook until translucent, about 5-7 minutes.
2. Add the minced garlic and grated ginger. Cook for another 1-2 minutes, until they release their aroma.
3. Add the chopped or pureed tomatoes and cook for about 5-7 minutes, until softened and the sauce has thickened slightly. Add the spices: turmeric, cumin powder, coriander powder, and red chili powder (if using). Stir well to combine.
4. Add the spicy tomato sauce to the cooked lentils and stir well. Cook for another 5-10 minutes over medium-low heat, stirring occasionally to blend the flavors. Taste and adjust the salt and pepper to taste. If you'd like a hint of acidity, you can add a little lemon juice at this point.
5. Once cooked, serve the dal hot, garnished with fresh parsley or coriander leaves if desired. You can accompany it with naan bread, basmati rice, or other Indian dishes.
