  • 0. Making the crispy breadcrumbs: In a pan, heat a drizzle of oil and toast the breadcrumbs until golden and crispy. Set aside.
  • 1. Cooking the pasta: Bring a pot of salted water to a boil and cook the spaghetti until al dente.
  • 2. To prepare the sauce: While the pasta is cooking, heat the extra virgin olive oil in a large skillet. Add the garlic and chili pepper. Sauté over very low heat, making sure the garlic doesn't brown, for about 2-3 minutes. Drain the pasta, reserving a little of the cooking water.
  • 3. Assembling the dish: Add the spaghetti to the pan with the oil, garlic, and chili pepper. Mix well, adding a little of the reserved cooking water to emulsify everything. Remove from the heat, add the chopped parsley and a generous amount of grated lemon zest. Stir well.
  • 4. Serving: Serve the pasta on plates, sprinkling the crispy breadcrumbs on top for a crunchy touch. Drizzle with a little extra virgin olive oil if desired.
