I khinkali sono un piatto tipico della cucina georgiana, simili ai dumpling asiatici o ai pelmeni russi, ma con un impasto più spesso e un ripieno succoso. Tradizionalmente, sono ripieni di carne di manzo o agnello e aromatizzati con spezie.
Ingredients
- Type 00 flour400 g
- Ground beef300 g
- Water200 ml
- Beef broth100 ml
- Garlic2 cloves
- Golden onion1 u (150 g)
- Fine salt1 teaspoon
- Black pepper1 teaspoon
- Cuminto taste
- Sweet paprikato taste
Procedure
0. In a large bowl, sift the flour and add the salt. Gradually pour in the warm water and knead until the dough is smooth and elastic. Cover with a cloth and let rest for 30 minutes.
1. In a bowl, combine the ground beef with the onion, garlic, and spices. Add the cold broth a little at a time, stirring to absorb the liquid. The filling should be soft but not runny. Add chopped parsley or cilantro if desired.
2. Roll out the dough on a floured surface until it's 2 mm thick. Cut out circles about 10 cm in diameter.
3. Place a generous spoonful of filling in the center of each disc. Lift the edges and pinch the dough with your fingers to form folds, twisting to seal.
4. Bring a large pot of salted water to a boil. Add the khinkali, a few at a time, and cook for 7-8 minutes, or until they float to the surface. Remove carefully with a slotted spoon.
5. Serve the khinkali hot, sprinkled with freshly ground black pepper and accompanied with a spicy sauce or yogurt.
