  • 0. In a bowl, beat the cold butter cut into cubes with the honey and dried lavender flowers until you obtain a creamy and fragrant mixture.
  • 1. Add the brown sugar and continue whisking until the mixture becomes soft.
  • 2. Add the egg and mix until completely combined.
  • 3. In another bowl, combine the chestnut flour, rice flour, baking powder, lemon zest, and a pinch of salt. Gradually fold the dry ingredients into the butter and honey mixture, stirring until smooth and compact.
  • 4. Wrap the resulting dough in cling film and leave it to rest in the refrigerator for at least 30 minutes.
  • 5. Form a roll with the dough and cut out discs about 5mm thick.
  • 6. Arrange the biscuits on a baking tray lined with baking paper and bake in a preheated oven at 170°C for 12-15 minutes, until the edges are lightly golden.
  • 7. Let them cool completely on a wire rack before enjoying them.
