I biscotti di #lavanda con farina di #castagne e farina di riso sono una delizia senza glutine, perfetti per chi cerca dolci dal sapore unico e raffinato. Profumati ai fiori di lavanda e arricchiti con miele, questi biscotti friabili e leggeri offrono un equilibrio perfetto tra il gusto rustico della farina di castagne e la delicatezza della farina di riso. Ideali per accompagnare una tazza di tè o da gustare come snack goloso in qualsiasi momento della giornata.
Ingredients
- Rice flour135 g
- Butter100 g
- Chestnut flour65 g
- Brown sugar60 g
- Dried lavender1 tablespoon
- Baking powder1 teaspoon
- Honey1 tablespoon
- Eggs1 u (60 g)
Procedure
0. In a bowl, beat the cold butter cut into cubes with the honey and dried lavender flowers until you obtain a creamy and fragrant mixture.
1. Add the brown sugar and continue whisking until the mixture becomes soft.
2. Add the egg and mix until completely combined.
3. In another bowl, combine the chestnut flour, rice flour, baking powder, lemon zest, and a pinch of salt. Gradually fold the dry ingredients into the butter and honey mixture, stirring until smooth and compact.
4. Wrap the resulting dough in cling film and leave it to rest in the refrigerator for at least 30 minutes.
5. Form a roll with the dough and cut out discs about 5mm thick.
6. Arrange the biscuits on a baking tray lined with baking paper and bake in a preheated oven at 170°C for 12-15 minutes, until the edges are lightly golden.
7. Let them cool completely on a wire rack before enjoying them.
