- Yellow potatoes400 g
- Water300 ml
- Extra virgin olive oil30 g
- Fresh yeast20 g
- Fine salt2 teaspoons
- Granulated sugar1 teaspoon
- Rosemaryto taste
Procedure
0. Potato preparation: Boil the potatoes until tender, then mash them until smooth. Mix the mashed potatoes with a drizzle of oil and a pinch of salt.
1. Prepare the dough: Dissolve the yeast and sugar in warm water and let it rest for 5 minutes until it becomes frothy.
2. In a large bowl, combine the gluten-free flour, salt, mashed potatoes, and chopped rosemary. Add the yeast mixture and olive oil. Knead until the dough is smooth and slightly sticky. Cover with a damp cloth and let rise in a warm place for about 1 hour, or until doubled in size.
3. Shape and bake the focaccia: Grease a baking pan with olive oil and roll out the dough with oiled hands, creating a rectangle. Let it rise again in the pan for another 20 minutes while you preheat the oven to 200°C.
4. Bake for about 30-35 minutes, or until golden brown and crispy. Remove from the oven and let cool on a wire rack before serving.
