Ingredients
- Ground chicken400 g
- Spring onion50 g
- Cornstarch (Maizena)2 tablespoons
- Parmigiano Reggiano DOP2 tablespoons
- Greek yogurt 0%2 tablespoons
- Sweet paprika1 teaspoon
- Eggs1 u (60 g)
- Vegetable oilto taste
- Fine saltto taste
- Black pepperto taste
Procedure
0. In a large bowl, combine the ground chicken, egg, cornstarch, minced garlic, spring onion, Parmesan cheese, and Greek yogurt (if using). Add salt, pepper, and paprika. Mix well until smooth. If the mixture is too wet, you can add a little more cornstarch.
1. Using a spoon or your hands, take a portion of the dough and shape it into pancakes about 1 cm thick. Place them on a plate.
2. Heat a nonstick pan with a drizzle of oil over medium heat. Once the oil is hot, carefully add the fritters. Cook for about 4-5 minutes per side, until golden and crispy on the outside and cooked through on the inside.
3. If necessary, lower the heat slightly to avoid burning the outside before the inside is cooked. Once cooked, transfer the fritters to a plate lined with paper towels to drain excess oil.
4. Garnish the fritters with fresh spring onion rings. Serve hot with a sauce of your choice (such as mayonnaise, ketchup, or yogurt sauce).
