Questo stufato verde è una celebrazione dei sapori della cucina mediorientale. Le bietole o gli spinaci si uniscono ai ceci in un brodo aromatico arricchito da spezie calde e dal caratteristico sapore agrumato del limone nero essiccato. La consistenza vellutata e il gusto leggermente acido rendono questo piatto perfetto per essere accompagnato da pane pita o riso basmati. Nutritivo e confortante, è ideale per i mesi più freddi.
Ingredients
- Vegetable broth500 ml
- Fresh spinach500 g
- Chickpeas (precooked)240 g
- Extra virgin olive oil4 tablespoons
- Garlic3 cloves
- Cumin1 teaspoon
- Coriander1 teaspoon
- Black dried lime1 u (20 g)
- Golden onion1 u (150 g)
- Turmeric1 teaspoon
- Fine saltto taste
- Black pepperto taste
Procedure
0. Wash the chard or spinach and chop coarsely. In a saucepan, heat 2 tablespoons of olive oil over medium heat and add the onion and garlic. Cook until translucent.
1. Add the turmeric, cumin, and coriander. Stir for 1 minute, until the spices release their aroma.
2. Add the chopped chard and cook over medium heat for 5 minutes until wilted.
3. Add the cooked chickpeas and vegetable broth. If you have a dried black lemon, make a small hole in it and add it to the dish. Alternatively, squeeze a little fresh lemon juice.
4. Cover and simmer for 30-40 minutes. Stir occasionally and season with salt and pepper.
5. Before serving, remove the black lemon if using and add a drizzle of raw olive oil.
