Ingredients

Procedure

  • 0. Make the syrup. In a small saucepan, combine the water and sugar. Add the cardamom and lemon juice and bring to a boil over medium heat. Once the sugar dissolves, reduce the heat and simmer for 5-6 minutes. Turn off the heat and add the rose water. Keep the syrup warm.
  • 1. Make the dough. In a bowl, combine the powdered milk, flour, baking soda, and semolina. Add the ghee (or melted butter) and crumble with your fingers to form a sandy texture. Pour in the warm milk, a spoonful at a time, and gently knead until the dough becomes soft. Don't over-knead, or the cookies will be tough! Cover and let rest for 10 minutes.
  • 2. Lightly oil your hands and form smooth balls, avoiding cracks on the surface (otherwise they will break during frying). They should be about the size of a walnut because they will expand during cooking.
  • 3. Heat the oil or ghee to 150-160°C (300-320°F) (over low-medium heat). Add the balls and gently stir with a spoon to brown them evenly. Fry for about 6-7 minutes, until golden brown. Remove with a slotted spoon and drain on paper towels.
  • 4. While still warm, dip the balls in the warm syrup. Let them sit for 2-3 hours, so they absorb the liquid and become soft.
