Ingredients
- Granulated sugar250 g
- Water250 ml
- Type 00 flour30 g
- Baking soda3 g
- Whole milk3 tablespoons
- Butter2 tablespoons
- Cardamom1 teaspoon
Procedure
0. Make the syrup. In a small saucepan, combine the water and sugar. Add the cardamom and lemon juice and bring to a boil over medium heat. Once the sugar dissolves, reduce the heat and simmer for 5-6 minutes. Turn off the heat and add the rose water. Keep the syrup warm.
1. Make the dough. In a bowl, combine the powdered milk, flour, baking soda, and semolina. Add the ghee (or melted butter) and crumble with your fingers to form a sandy texture. Pour in the warm milk, a spoonful at a time, and gently knead until the dough becomes soft. Don't over-knead, or the cookies will be tough! Cover and let rest for 10 minutes.
2. Lightly oil your hands and form smooth balls, avoiding cracks on the surface (otherwise they will break during frying). They should be about the size of a walnut because they will expand during cooking.
3. Heat the oil or ghee to 150-160°C (300-320°F) (over low-medium heat). Add the balls and gently stir with a spoon to brown them evenly. Fry for about 6-7 minutes, until golden brown. Remove with a slotted spoon and drain on paper towels.
4. While still warm, dip the balls in the warm syrup. Let them sit for 2-3 hours, so they absorb the liquid and become soft.
